By default, Gastrodon is dual Ground and Water type, but you definitely want the Tera Type to be Ground. The ideal Nature would be Modest (use a Mint if necessary) and the ability should be Storm Drain to make it immune to Water attacks (use an Ability Capsule if you need to). Give it Soft Sand as the Held Item to increase the power of its Ground attacks by 20%. The moveset should include Mud Shot, Stockpile, Earth Power and Recover. Lastly, be sure to EV train HP and Sp Atk to 252 and Defense to about 4 or so.

You will have to level it up all the way to 100, as well as Hyper Train it to make it ready for the seven-star battle. From there, use Mud Shot (obtained via TM 035) and Earth Power to build up your Tera meter. From turn 5, terastallize and keep beating it down with the super-powered Earth Power.
